Meal Plan Monday (5/23/11 - 5/28/11)

Considering this month has been a train wreck financially, we are eating out of the pantry/kitchen/freezer for the rest of May.






So my meal plan for the week includes:

Breakfasts: quiche, scrambled or fried eggs, bacon or sausage

Lunches: egg salad, tuna salad

Snacks: homemade banana walnut bread, zucchini blueberry bread , cheese cubes, apples, nuts.

Dinners:

Monday: bratwursts and baked potatoes with broccoli and cheese.

Tuesday: chicken fajitas

Wednesday: meatballs with alfredo sauce and pasta, green salad

Thursday: baked or grilled chicken leg quarters with BBQ sauce, asparagus(from MIL's garden!)

Friday: breakfast for dinner -- blueberry pancakes, eggs, sausage or bacon.

Saturday: pork roast (make in smoker) asparagus or broccoli.

To quickly introduce myself, I am a full-time student, wife, and mother of 3 kids. I live in western Indiana in a smallish house, in a medium size city. I am slowly trying to make our yard an urban homestead. I love to garden, read, watch too much reality TV, bake, and cook new recipes. I love all kinds of ethnic food. I am attempting to change my family's diet to a whole/real foods approach, but that is going slowly too. Darn kids love their Pop-Tarts and sugary cereal too much.
